Vines :<\/strong> 50 years old, “Schuetzenrain”<\/strong><\/em> plot which means “Protected from rain” for Pinot Gris and “Kastelweg”<\/strong> <\/em>meaning “Chemin des Ch\u00e2teaux” for Sylvaner.<\/p>\n

Terroir :<\/strong> marl limestone<\/a>. Composed of clay deposits associated with oolitic limestone pebbles of marine origin. These yellow stones which heat in the sun gave the name of the cuv\u00e9e Les Roches Dor\u00e9es.<\/p>\n

In the cellar :<\/strong> slow and gentle pressing; fermentation without adding yeasts; very moderate sulphiting; maturing 6 months on lees in stainless steel vats; bottling at the estate. We put our wines in reserve to offer them to their best potential.<\/p>\n

Muriel’s advice :<\/strong> Les Roches Dor\u00e9es cuv\u00e9e is an excellent dry wine for the aperitif. It will also accommodate duck glazed with spices, Norman-style veal mignon, peppers stuffed with vegetables, veal chop au gratin, wild boar hazelnut with foie gras, stuffed quail legs.
