Vines :<\/strong> Our vines are on average 30 years old, from selected old varieties and grafted to the estate from generation to generation.
\nDivided into slopes and midslopes on 40 plots for an area of 8 ha. This diversity is found in the grapes of each plot.
\nThe yield is reduced to less than 60 hl\/ha.
\nWe mow the grass 1 out of 2 rows and we work the soil of the other row by practising organic viticulture since the 1980s.
\nWe started organic certification in 2019.
\nOur soils are alive, our vines are balanced, our grapes are \u00abwell in their skin\u00bb.<\/p>\n

Terroir :<\/strong> This wine was born in the plot of the place called \u00abKastelweg\u00bb meaning \u00abChemin des Ch\u00e2teaux\u00bb.This terroir is provided with well drained spring water and composed of beautiful oolithic limestones of marine origin covered with limons: it is a terroir rich in mineral salts available for our wines.<\/p>\n

In the cellar :<\/strong> We taste the grapes to decide on the optimal harvest of each plot and achieve the best balance in sugar, acidity and taste.
\nOur pneumatic press allows a smooth and slow extraction. Our juices flow by gravity and then are naturally released to preserve all their aromas.
\nOur fermentations engage with the indigenous yeasts in stainless steel tanks, without temperature control. They take on a different rhythm depending on the character and energy of each wine. In equilibrium, air extraction and a single sulphiting are sufficient for stability. This is followed by lees breeding, kieselguhr filtration, and bottling at the estate.
\nWe reserve our wines to offer their best potential.<\/p>\n

The result is a sustained robe, golden yellow, and intense aromas, between flowers and ripe fruit, which take on apricot tones in the mouth. Although well melted, the wine is not smooth. Supported by a fine acidity, it is fresh and persistent. Perfect for a veal blanquette.”<\/em><\/p>\n

Nose :<\/strong> Toasted, brioche notes and an almond and hazelnut finish with a touch of strawberry and fresh grass.<\/p>\n

Palate :<\/strong> ample, concentrated, fruity and fresh.<\/p>\n
