Vines :<\/strong> Our vines are on average 30 years old, from selected old varieties and grafted to the estate from generation to generation.
\nDivided into slopes and midslopes on 40 plots for an area of 8 ha. This diversity is found in the grapes of each plot.
\nThe yield is reduced to less than 60 hl\/ha.
\nWe mow the grass 1 out of 2 rows and we work the soil of the other row by practising organic viticulture since the 1980s.
\nWe started organic certification in 2019.
\nOur soils are alive, our vines are balanced, our grapes are \u00abwell in their skin\u00bb.<\/p>\n

Terroir\u00a0:<\/strong> This wine was born in the plot “Rouffacherweg” meaning “Chemin de Rouffach”. This terroir is made up of large scree and rocks of Vosges pink sandstone, covered with beautiful deep soil rich in clay. A beautiful location with a good water reserve which gives the wine lots of fruit and elegance.
\nExposure: East Altitude : 250 m<\/p>\n

In the cellar :<\/strong> slow and gentle pressing; fermentation without adding yeasts; after 1st fermentation, very moderate sulphiting.<\/p>\n

All the stages of the Traditional Method are carried out at the Domaine: prize de mousse, aging on slats (around 2 years), disgorging, \u201craw\u201d dosage.<\/p>\n

Nose:<\/strong> intense notes of small red fruits. Fine bubbles with a light and persistent bead of foam.<\/p>\n

Palate:<\/strong> the mouth and the bubble are fresh and smooth. The lingering finish comes back to raspberries.<\/p>\n

Muriel’s advice:<\/strong> as an aperitif, with vegetable dips, savory cake, toast and canapes or cold terrines. It tenderly accompanies the delicate flesh of poultry and roast veal. At the end of the meal, it dialogues all in red fruits with a gazpacho of fresh strawberries<\/a>, cream puffs or raspberry
